RECIPE

Bao Buns

Best bao buns I have made, secret the milk powder for sure. Make a day ahead and re-steam when you want to serve. 

Makes 14 Bao Buns

Total Prep Time – 135 min

Steam Time – 12 min

Make ahead – Yes, day before 

ingredients

360g plain flour, plus extra for dusting, all-purpose
20g skim-milk powder
4g baking powder
5g instant dry yeast
35g white sugar
35g vegetable oil, plus extra for greasing the dough
200g warm water
14 squares of baking paper, 10x10cm

Bamboo steamer Pre-soak  – 20 min


Dry ingredients:
flour, milk powder, baking powder, yeast and sugar

Wet ingredients:
vegetable oil and warm water.

Make a well in the dry ingredients and pour in the liquids. Stir with a spoon and then knead until it comes together.

 

Knead – 5 min – smooth
Rest – 90 min 
‘Punch down’ 
Knead – 5  – 10 min

Roll dough out – 1cm thick
Vegetable oil over the surface of the dough – lightly 
Cut Circles – 8cm, fold in half, flatten slightly. 

Place on a square

Rest – 30 min

Bamboo steamer over pot one-third full with water and place over high heat
 
Steam –  12 min

Then turn off the heat (don’t lift the lid) and allow the buns to rest over the hot water for 5 minutes.

** can also make in over on tray, water to a second tray for steam at 190C.

HOW TO BOOK

The Creative Fee of R3800 as well as a signed contract is required to secure your session date, this fee is non-refundable but you may rebook your photoshoot with prior arrangement.

SESSION TYPE

I am currently only booking small family photography sessions of up to 5 people at a time. This does mean including pets as they are equally important within our families. In order to keep all sessions intimate, I no longer photograph extended family sessions.

START TIME

Plettenberg Bay, Robberg, Knysna sessions take place 1.5 – 2 hours before sunset, while Keurbooms Beach sessions during the early morning just before sunrise.
